When we do a promotion in another country the first step is to looking for the right place (market, connexions) and see what is possible to buy. Sometimes the products won't be in good quality, even "faked" or "expired". Before starting to write the menu, let's see what is available. So everything start by a "market survey. So let's go to the market and see what we can find out....


Second step : decide the menu based on the below criteria:
- food cost
- product availability
- local taste
- open mindness of the customers
- skills of the kitchen team
- kitchen equipment


Step 3:
Training the keys persons in order to have a consistant promotion from day 1 to day Z.



Step 4:
Train the waiter/waitress in order to have good operations and good promotion. If the service doesn't know, how it could be successful ?


Step 5:
Determine the buffet decoration.

Go to a 5 stars hotels, sit at the lobby lounge in the afternoon around 4pm....
Most the hotels having an high tea concept and being a French at a Novotel, we decided to launch a new idea : the French Style High Tea. Do you know what is it ?
It's quite paradoxal for the French people to take an afternoon tea, more used to the coffee or  the"gouter", a break time composed of cold cut, bread and cheeses. Anyway now with the globalization of the food culture, why not combine the British concept with the French ingredients.

You can find at th French High Tea macarons, stuffed crepes, a fraisier (strawberry cake), chocolate mousse, creme brulee, choux, eclair and mini tartines.

Asian food is very different in each country but there is one kind of dish can we can find almosst everywhere is the curry.
But by the way what is a curry exactly ?
By definition, it's a dish cooked in sauce with spices. It doesn't mean hot, some curry are without chilli and pepper.
If we looked worldwide in fact many countries have their own curry and not only in Asia. Do you know any French curry ? ....... think about it.

Here the hot dishes line.
I proposed a selection of Indian fish malvani, Myamar chiken curry, Thai Beef Panang, German sausages curry....

Beside some roti, the famous Indian bread.
The pappadams are alson delicious with the Indian curry. Pappadam is a thin and crispy flatbread made from lentil-flour, often deep-fried or grilled.
