Well, i am not a chinese chef but I can do a litlle and I am not a stranger about chinese food.
I got a diploma in april 2001.

I have study from october 2000 to april 2001 at the Vocational High School Xi Yuan Li in Beijing.

My score is fair, what do you think ?

I was part of the first exchange between China and another country to pass a chinese diploma of chinese food. We were 10 students.
So I am one of the first ever to receive a chinese diploma of chinese cooking passed in China. Special, hum ? Yes, I was lucky I think so. we were the stars of the CCTV and newpapers in Beijing for over 1 year.

You don't believe me, right ? Check that :
Yes, it's me doing  "Gong Bao Ji Ding

With my Beijing Duck teacher : Guo Laoshi

How to prepare the duck ? Hum, not easy with my big hands...

Well, I stay there only 1 year but I learn many things for that experience.
Ok, now I know and I can do a good goulash, pierogis, borsch or bigos.

But I experienced something totally different but a small team of 12 pax, many groups and western set menus. Some occasional buffet. Everybody have to work hard and must do everything. ( hello Artur, Piotr Spider, Pawel "Kurwa", Gregorzh, Small Anna, Big Anna ).

Here is a special promotion for the Beaujolais nouveau. I made a buffet with a "fried frogs sauteed with rosemary for the occasion"
