The hotel will be open soon. The managers are here. Now it's time for the mass recruitment. About 1500 persons have applied during 2 days. Some with experience, some without.
 900 pers finally has passed the first quick interview with the human ressources and wait for the interview for the department they have applied.
 After the interview, within 5 minutes, we will kept about 500 for a second interview one week later.

Now, it's the pre-opening time. The hotel Howard Johnson will open the 30th of november 2007. The key people are already arrived. Now we are only a small group, getting bigger and bigger weeks after weeks. At this time we were 8 one month ago, 12 one week later....now 16. Next week, about 80 more will join the food & beverage department. We will be a total of 206 persons, waiters and cooks...

I am arrived in Chongqing in the middle west of China the last 30th of july 2007. I am working now for a new hotel brand, Howard Johnson from the hotel group Wyndham, one of the biggest worldwide group. Our hotel is planned to be open in november and now we are in the preparation. On the 26th of may 2007, at the Rose Garden restaurant in Wuhan, I prepared a special menu for a "Wine & Dinner" event. As soon as I got the wines selection and their characteristics I started to work about the menu.The most important is to have the food "matching" with the wines but also it has to be something special and unique. The menu was a little fancy, fusion and diethetic ( all cooked without fat ). Let's have a look :  Starter " Grilled chicken marinated with Orange, with shrimp blinis and tex-mex salad.  Then for the second course : Steamed Rabbit Paupiette with Tomato-Olive Compote and Rosemary Gravy  Third course : Halibut with Gingerbread crust, Spicy Chocolate Sauce and Mosaic of Vegetables  Fourth course : Blue Cheese Creme Brulee with Hot Finger Cookies and Berry Tart Fifth course : Papaya and Plum Gratin  About 50 persons were present, french people, chinese, polish and german.
